What Is Canning Fruit and Vegetables All About?

There is a distinct possibility the stand mixer is the most useful appliance to be found in any kitchen, from the family kitchen to that found in the finest restaurants.

November 17, 1885, was a moMentous day in the history of labor-saving kitchen appliances. On that day, inventor Rufus M. Eastman received the first patent issued for an electric mixer which could use mechanical power, water power, or electrical power.

African-American inventor Willie Johnson was responsible for the 1884 design of an eggbeater powered by a driving wheel in connection with an arrangeMent of gears and pulleys which turned a set of beaters, blades, or stirrers.

Appliance companies such as Bosch, KitchenAid, and Sunbeam were quick to expand upon Johnson's idea, turning to the production of multipurpose kitchen gadgets.

The prototype electric mixers were anything but graceful; they were large and bulky and looked more at home in a factory than in the home kitchen. By the 1930s, at least a dozen companies were turning out electric mixers, of which the two best known were the Hobart/Kitchen/Aid and the Sunbeam Mixmaster.

The model M4A Sunbeam Mixmaster, first introduced in 1930, had a flowing silhouette in comparison to the ungainly outlines of its competitors. This sleek machine became so popular its name "Mixmaster" became synonymous with "stand mixer," just as "Jell-O®," "Kleenex®," and "Band-Aid®" are to gelatin dessert, facial tissue, and any first-aid bandage.

The new stand mixer was not merely just a gadget to amuse a cook; rather, it was a composite of gadgets which were copacetic with one another. Sunbeam originally advertised the Mixmaster as capable of performing a variety of tasks, provided the appropriate attachments were available.

A craze for household mechanization began to sweep the nation in the late 1800s. Servants were leaving domestic service in droves to enter the general work force. The Depression and World War II disrupted life everywhere. Many domestic workers filled Jobs in factories and such, which up to then, were held by the men who were off to war. Because of the perceived "servant shorTAGe," middle- and upper-class womanhood turned to do their own housework, especially in the kitchen. They were anxious to find kitchen appliances that could save time, money, and energy.

In 1908, engineer Herbert Johnson, president of the Hobart Manufacturing Company of Troy, Ohio, fabricated a device that could ease the workload wherever Food was involved. After Watching a baker using a metal spoon to mix bread dough, he tinkered around until he came up with a mechanical version; by 1915, Hobart's 80-quart mixer was part of the standard inventory on all United States Navy vessels plus he had his foot in the door of many commercial bakeries.

By 1918, KitchenAid's management was doing tasting trials in their own homes. The machines were such a success, legend has it, that one of the management's wives gave it a glowing recommendation: "all I know is it's the best kitchen aid I've ever had."

By 1919, the Hobart Company had become KitchenAid and was merchandizing a "Food preparer" (stand mixer) suitable for the home kitchen. It was very large at 65 pounds and very expensive: 9.50 (equivalent to around 00 in the early 2000s). However, in 1936, industrial designer Egmont Ahrens trimmed down both the mixer's size and especially its price TAG to .

This new kitchen appliance was an adaptation of the 1908 commercial stand mixer and featured a groundbreaking design known as "planetary action;" the action blends the ingredients all the way to the edges of the bowl. The bowl never needs to be manually rotated.

Early sales of the KitchenAid mixer by retailers were rather slow. Perhaps the businesses were being overly cautious about a new and expensive appliance. Hobart/KitchenAid created a mobil work force, made mostly of women, to approach the public by door to door, demonstrating the wonders of the new food preparation tool. Perhaps KitchenAid thought a woman talking to another woman about this new product would be more of an intimate sales approach. The citrus juicer and food grinder attachments, first available in 1919, made the stand mixer even more attractive.

In 1937, KitchenAid introduced fully interchangeable attachments, a wise marketing ploy. The concept is still being utilized in the 21st century. For example, the 1919 pea shucker attachment, although not available anymore, will still fit today's model.

The title of an "American Icon" has been conferred upon the KitchenAid stand mixer by the Smithsonian Institution Museum in Washington, DC, where the mixer is on display as an important force in American family life.

KitchenAid may have been the first group to manufacture the electric standing mixer but the greatest degree of consumer acceptance went to the Sunbeam Mixmaster, invented by Ivan Jepson. His Mixmaster was patented in 1928 and 1929, and was first mass- marketed in May, 1930.

Jepson was able to create a mixer for Sunbeam that sold for a fraction of the KitchenAid machine's price. (In the early 1930s, the Sunbeam mixer retailed for a mere .25 [0 in the early 21st century], as opposed to the hefty 9.50 for the KitchenAid.)

Jepson, a Swede, emigrated to the United States. Arriving in the country in 1925, he sought employment in Chicago, at the Chicago Flexible Shaft Company, parent company to Sunbeam. The company expansion was for increased kitchen appliance production and Jepson became Sunbeam's head designer by 1930.

By 1940, many years ahead of its time, Jepson's Mixmaster was capable of a multitude of tasks: it could squeeze juice, shell peas, peel fruit, press Pasta, grind meat, and grind coffee beans as well as open tin cans, sharpen knives, and polish silverware. It also had a mayonnaise oil dropper attachment, ostensibly controlling oil flow into the juicer bowl.

The Chicago Flexible Shaft Company (parent company of Sunbeam) also made tools for grooming farm animals. Somehow, I don't see the connection! The KitchenAid "Artisan" stand mixer (probably KitchenAid's most popular and least expensive model) comes in 22 distinct colors which are applied with a spray-on powder rather than paint. The KitchenAid "Artisan" can be assembled by hand in the factory in a remarkable 26-second cycle. The product name - "Mixmaster," by Sunbeam, has become generic for all mixers. In 1998, the U.S. Postal Service printed a series of stamps highlighting the most memorable trend of each decade of the 20th century. Mixmaster was chosen as the most authoritative image to represent the household conveniences of the 1930s. Do not confuse mixers with blenders. They are two totally different devices. Blenders have sharp blades and usually work at Faster rates which chop, liquefy, or fragment larger food items into smaller pieces; a mixer works much more slowly and has no blades.

If you are into juicing, have you ever wondered if you can drink too much juice in a day or for that matter at one time?

In other words "How much juice can be consumed safely?"

As a general rule one pint (16 ounces) daily is the minimum that will provide any perceptible results. If you are interested in optimum results you should be taking two to eight pints or more daily. Eight pints equals one gallon (128 ounces).

Bear this in mind the more juice you drink, the quicker you will see results. Any juice squeezed should be consumed within 30 minutes.

In the beginning when juice consumption was first introduced it was suggested that it be taken in small doses. This was mainly because there was no commercial juicing machine on the market at the time. Can you imagine squeezing 128 ounces of carrot juice by hand! Today it is not a problem with some excellent and efficient hydraulic juicers on the market.

There are some some definite principles involved in producing a juice that will retain all the vitamins and minerals that are contained in the original fruit or vegetable. The release of the mineral and chemical eleMents; the vitamins and hormones from the tiny microscopic cells of the fibers of fruits and vegetables, then separating the juice from the fiber is really an art.

The centrifugal juicing machines only extract a very little of the vital eleMents, vitamins, etc. from the fruits and/or vegetables. It is a physical impossibility, using centrifugal juicing machines, to extract more than a certain percenTAGe of the liquid or moisture. Check the pulp after a juice session with a centrifugal machine, see how moist it is. If you took this pulp and processed it through a hydraulic press it would probably render almost as much juice as was produced by the centrifugal process.

Need I say more about the advanTAGe of the hydraulic juicing machine.

Notwithstanding the disadvantages of the inefficient centrifugal juicing machine, there is still some benefit to be derived from such juices, as the water they contain is definitely vital organic, and as such it has a great deal of beneficial nutritional value.

Water is inorganic. Tap or public water has been treated with chlorine and other chemicals which really makes it unfit for human consumption. Just because it does not make a person sick does not necessarily mean that it is benefits the human body. The water in streams and rivers is also inorganic as it does not contain the vital life-containing atoms of fruit and vegetable water.

The only source of vital organic water is derived from vegetation. This means that our fruits and vegetables and the juices from them, which contain the vital organic water, is the only water source that will keep the human system healthy. YES - we also need pure water for continued hydration of the human system, not for nutrition. These fruits and vegetables must be raw and must never be cooked, steamed, canned or otherwise processed or pasteurized.

Drinking juice from which the pulp (mush) "has not" been extracted, taxes the digestive organs MORE than eating the raw fruits and vegetables. When eating raw fruits and vegetables the saliva created by the process of complete mastication is essential to the complete digestion when the cellulose fiber is present.

The correct way to prepare juice is to grind the fruits and vegetables completely which means the complete reduction to a fibrous mass. This mass should be some fine it could be spread like apple butter. A hydraulic press is ideal for this method of juice preparation.

I needed something to really set me apart from the competition, being one of five cafes in town. So this is what I did - I bought an automatic juicer.

Of the couple of dozen restaurants and cafes in my area, I became the first to offer a fully functional juice bar. I began serving freshly squeezed seasonal fruits and vegetable juices daily. Once I had something fresh and new to promote, customers weren't too far behind. Now every morning when we open at 10am, there is a line at the door. I firmly believe that adding a commercial juicer to my café was the right thing to do. The quality of juice obtained from an orange juice extractor is not the same as what is mass-produced and sold in stores. It has a freshness, a vibrancy that really puts an extra kick into your step.

I was sitting in my living room thinking "what new angle" to try out for my café, when I heard a cable news story on the National Cancer Institute's recomMendation for Americans to add more fruits and vegetables into their diets. The majority of people living in the United States do not get the 4-5 servings needed to enjoy healthy lives. Well, I thought, what's easier than not even having to eat fruits and vegetables? Drinking them! My next move could only be to move a juice bar into my restaurant.

The crucial thing is that the juice is freshly squeezed. I have to stress this. Nobody will visit your restaurant for store-bought juice. There's no point in it. Fruits and vegetables lose most of their vitamin and mineral content within two hours after juicing, and being stuffed into cartons and then pasteurized only further lowers the nutritional content. Only when consumed right away does freshly squeezed juice (like that which I provide my clients from a commercial juicer) burst with life and energy. The phytochemicals and enzymes found naturally in fresh fruit and vegetable juice prevent many cancers and imbalances in the body.

It's been six months now and I have had customers tell me that if I ever storage my automatic juicer or stop serving freshly squeezed juice in general, they will never come back. Older clients have told me that after just a month of regularly drinking freshly squeezed juice, they're feeling younger and more energetic. And to top it off, I've enjoyed a 70% increase in profit. I'm not up late anymore wondering if I'll have to cut corners to keep my cafe running. Even in a bad economy, you can run a successful business. I learned it's about ingenuity, and being one step ahead of everyone else. I have to tell you how grateful I am that the only thing I needed to do to increase my cafe's popularity and my net income was purchase an automatic juicer.

Raw foods contain valuable nutrients and are easily digested because they naturally contain enzymes that aid in the digestive process. Because they are so easily digested they allow the body to undergo a rest period while cleansing and healing with the use of the vital eleMents in the "real" food you are ingesting.

In order to give the digestive system even more of a rest, you might like to try juicing. Juicing is accomplished with a juicer, which removes the pulp from the fruit or vegetables being juiced.
